Description

So, we started class this week and I have Advanced Pattisserie and Chocolate Confection. And this is our first plated dessert for the quarter. It's a slice of caramelized pineapple with a rum ginger sauce with a honey tuile cup containing coconut sorbet with toasted shredded coconut on top served along side a couple of Madeleines. This was really good.

lol our chef would have killed up if we did pineapple lol...coconut for some reason they never wanted me to do...i luv coconut...and the honey geez we used all the time. but looks luvly nonethe less
